Lentil Salad

Making giant batches of salads on Sundays have really been a time-saver for me. This one is really simple, but fresh tasting. I found myself looking forward to it each day at work. Very easy to modify as well.

Lentil Salad


  • 1 can green lentils, rinsed really well
  • 1 handful parsley, chopped
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • some dried tomatoes, chopped
  • 3 green onions, chopped
  • half a cucumber, chopped
  • some dried basil
  • 1 clove garlic, minced
  • 1/2 tbsp olive oil
  • 1/2 tbsp balsamic
  • salt and pepper

Pre chopped



  • Chop vegetables, add together with lentils, seasoning and oils. Adjust to taste. Chill overnight. Eat.
