Savoury Chickpea Flour Tarts

Crust Ingredients:

  • Chickpea or Garbanzo Bean Flour
  • Olive Oil
  • Water
  • Cayenne Pepper
  • Cumin Powder
  • Salt and Pepper
Preheat oven to 400 degrees. Combine 3 cups of chickpea flour with 1/4 cup of olive oil. Slowly add water while mixing until a smooth consistency is reached. Sprinkle a teaspoon each of spices and mix well. Scoop 1-2 tablespoons of dough mixture into a greased muffin tray, forming a crust for your tarts. the chickpea flour will rise quite a bit, so the crust dough does not need to be as thick as you might think. Bake for about 10 minutes. While the crust is baking, prepare the filling mixture below.
Filling Ingredients:

  • Red onion
  • Garlic
  • Purple Cabbage
  • Red Pepper
  • Button Mushrooms
  • Spinach, fresh or frozen
  • Green Onion
  • Veggie Ground
  • Ponzu Sauce
  • Same spices as for crust
In a heated sauce pan, fry onion and garlic with olive oil until cooked. Add finely chopped red pepper, cabbage and button mushrooms. Once the veggies are cooked, add a package of veggie ground to the pan. Sprinkle with 1tsp of Ponzu sauce and spices to taste. When almost ready to take off heat, add chopped spinach and green onion.
When crust is ready, scoop out of muffin pan onto a serving tray. Fill with veggie mixture with heaping spoonfuls. Serve with fresh greens /salad for a complete meal.
